Vineyard: The fruit comes from our winery block vineyard, in the Harcourt Valley, a cooler climate slice of the southern Bendigo wine growing region. Well drained sandy granitic soils make up the vineyard, creating expressive, driven wines, with freshness and minerality to the fore. This year is a blend of carbonic macerated Shiraz, with direct press Cabernet.
Winemaking: Whole bunches placed in fermenter, and covered with CO2 for 12 days of carbonic maceration. After this, a gentle pigeage by foot, and allowed to macerate overnight. Pressed into stainless steel, where it was left for the winter. Blended in the spring with a few glugs of direct press Cabernet.
